I get this lag IF I enable the "Small" icons version of the Start Menu. I have no idea why this is (other than perhaps a bug in the Sprint firmware), and I've spent hours trying to figure it out in the past. Fortunately, I prefer the large version anyway, so I just use it and all is well.

I've been to the "Menus" screen where I can choose which items in my Programs folder to display but every time I uncheck the dead Google Maps icon I get a message that says "cannot move item" and my only option is to hit OK. How can I remove the dead icon and replace it with the new one?
That's just a generic Windows Mobile Add/Remove Programs quirk. First, open File Explorer and navigate to \Windows\Start Menu ... you will probably see the "dead" link there, so tap-and-hold on it to bring up a menu, and then delete it. That should force it to go away.
