If using one of his cooked ROMs (i.e. you unrar a xxxx.nbh file) it is pretty tough to do. If using his kitchen, you first get the right SYS folder in place, then extract the contents of the XIP into the ROM and SYS folders and cook. It's pretty easy. Let the XIP over-write what's in the kitchen now (it only replaces the .ROM and .VM files in the SYS folder, and the os.nb.payload and boot.rgu in the ROM folder).

I used 20764 for quite a while and was satisfied with its speed. It was stable. I then used 20954 for a few days and it was definitely laggy compared to 20764. 21015 seems as fast as I remember 20764 being, but with the passage of time and playing with 20954 in between I can't say for sure which one was faster. Most likely, they are the same. Note - I was using 10MB pagepool on all three and a fairly fat ROM. lllboredlll usually runs a stripped ROM and smaller pagepool so that may reveal a speed difference between the two that I couldn't see with my specific build.
