This happened ALL the time on my gf's touch. I searched and found a thread about it. It said something along the lines of:

hit menu (bottom right) in the phone dialer screen
select dialing options or smart dialing
disable this feature

I haven't checked with her since making the change, but I haven't heard her complain either. HTC should relabel it as dumb-dialing or drunk-dialing..
