When you have 2 different programs using the same file name, that's where it starts getting a little tricky because you will have to learn how to use provxmls but look around in the kitchen, you see multiple examples, so copy and modify and test is really the only way of doing it. Look at the one in the white clock folder, that one has a rename command which could work for you

Building the ROM is actually pretty easy, all you have to is make the selections and the kitchen will do the rest, if you want to insert your own OEMs, then a little learning is required as you have to make sure registry keys, shortcuts, etc are right and go where the need to but once you do it a couple of times, you'll figure it out
