There are 2 options:
1) PhoneAlarm full has an option to enable/disable Push email with certian profiles, so with "Night" it can turn it off.
However, I'm not sure if it works yet with the 700wx and Bruce is working on it.
2) The easy, free method is under "Schedule" under the ActiveSync Menu options. At the bottom, you can set Peak/Off peak times and also basically how it handles during that period: so at off-peak set to manual instead of auto.
There is also this little trick: when you go to bed, leave Outlook open e.g. so you can see the messages in the inbox. Doing this disables any alerts for new messages.
