Are you sure it's not "unread message alert" in the last page of settings? I could see confusing that with a beep every time a message comes in because it beeps whenever there's an unread message for some number of minutes.
You can also set your email notification to "None" in Settings...Sounds.
I use exchange and my phone never beeps when a message comes in.
