Most of the time, to bring the phone back to full speed, you restore it, this takes time no matter what, and if your like me, it somewhat longer since i unlock it (im on tmobile for iphone since theres no 3g in my area so att is pointless), have to spend time to do apps, custimize, etc.
Now as for a phone such as the Touch Pro, i must say it has a steeper learning curve. Don't be msitaken, im also a so called "iphone poweruser" since i've done just about everything with it including the full hardware unlock. But the Touch Pro, mostly WinMobil, seems to have a higher learning curve and more advanced for the options that you can do. im currently on my 3rd day with the Pro so im still learning, and personally i like the phone, but now and then i still miss using my iPhone because of just how visually beautiful the OS was. But i like having the extra feeling of safety on my Pro though, since i've had times before when my iPhone would just "die" while im outside, but now with the Touch Pro, i can just hard reset on the go and ill at least be able to use the phone. I also like having the option of just copying my files over like videos and just playing them without the hassle of converting and such.
So IMO, the Touch Pro is better if you like to have more freedom, as for the iPhone, even if you do jailbreak it, always expect to run into some problems down the road.
No warez on iPhone? haha thats a funny one. Back when the AppStore was released and long before, i was very active in the iPhone community, and let me assure you, on Day One of the AppStores release, it was cracked. Even to this day, Apps are being cracked, and nothing has been done to stop it. And frankly, its much easier in general than anything with WinMobile. For the iPhone, all you need to do is run a debugger and a couple other quick programs on the device with the App, and viola, you have a DRM Free App, which all you need to do is copy over and it's ready to use.
Yes the iPhone can do 1080p, but in the real world, thats really doesnt help the device that much right now. The only possible storage configurations are 8gb and 16gb, and after some compresion and conversion, you *might* be able to fit one 1080p movie on the 8gb by taking up all the storage, so in the OPs case, i think this is an insignificant point.
