There are really only 2 types of kitchens around: Bepes and PPCkitchen's. You can convert freely between Bepe and PPCkitchen, if you have some basic understanding of how each works. That being said, you should know your stuff if you want to use Bepe's - it's much easier to make mistakes without realizing it. All Bepe kitchens can be used in PPCkitchen, the reverse is not true.

As for making OEMs, it's tedious but not hard most of the time (sometimes it's a pita!), but the automation tools often make less than ideal OEMs. Also, you can always install from .cab after boot - you don't have to OEM everything.
