I assume I can install the apps after the rom update by copying the apps from the rar files to my ppc and then installing them individually. Is that the best way to do this or if there another way that's quick and easy?

Thanks
No. The kitchen and associated .rars are for making ROMs. You can not put the parts on SD or install them after flashing as if they were a .cab.

You may be able to install some OEMs after flashing by using nuePackage installer.
