There is a whole bunch of step by steps already posted.
For a stock Sprint Touch (not previously upgraded or loaded with cooked ROM), just for 6.1 there is only 1 step - have you phone connected and run the latest ROM (see sticky). That is what I did.
If you want to preserve the info from your device you will need to back it up, and restore once you are done. There are links in the real step by step instructions.
