Everything seems ok besides that... but it shoudn't take THAT long to get service should it? My Apache would find a tower as soon as it got to the Today screen but this thing takes forever... :s

why not test with another persons rom? try ghettoryders or OMJ. GPS is a iffy with verizons. I assume you talking about Verizon phone service. i dunno, i never cooked, try another persons rom versus home cooked your first day haha
