Space gained - preinstalled apps w/ kitchen

Ok, hopefully this question makes sense. I used the kitchen to cook my custom ROM for my xv6700 long ago. I hope I remember correctly, but by installing all of the apps that I wanted by using the kitchen, I was using space that was not open to apps as a regular cab install. Because the amount of memory available on the xv6700 was pretty small, I remember that opening up the locked memory was really cool and allowed maybe 34MB extra???...

So my question, is there hidden memory on the xv6900 that we are tapping into with the kitchen for custom ROMs now? If so, is it a pretty decent amount? Even after all of my 3rd party apps (almost all installed directly to the phone) I have 57 MB of space left. If I cook my own ROM will I benefit from space not utilized or will it be a waste of my time to reconfigure my whole phone for nothing.
