Why cook/add applications to OE ROM?

I can understand when one might want to remove a feature or application to the OE ROM, but what is the advantage of including additional applications as part of the ROM package?

If one were to take the OE ROM, install all the desired apps and make the preferred configuration changes, and make a full back up, doesn't this accomplish the same as including the apps in ROM (for recoverability after hard reset)?

It would not be distributable, but for personal use, isn't this better? Since most apps will see regular version upgrades, having apps NOT included in ROM will make it easier to install new versions too (not having to worry about overwriting ROM-based files).

Is there something I don't see or understand? Any related information is helpful.
