The current setup seems to really need cell coverage... I will try it out in Europe later this month but am afraid it will not work without cell phone coverage...

The Built in GPS on your Touch is not sensitive enough to get a GPS signal while Flying in a plane. Your surrounded by electronics and your moving too fast to actually get a lock/fix on your location. Your bluetooth GPS is BY FAR a hella lot more sensitive (probably SirfIII). Our phones built in A-GPS (Qualcomm MSM 7500) work in standalone mode as well as in assisted and does not require a cellular connection to obtain a sattelite fix and navigate. If your are standing outside in plain view of the sky and cannot get a GPS fix (in airplane mode) then something is wrong with your setup.
Have you used the PPST.exe fix found in the windows/PPST.exe directory to provision your GPS?
