It depends on which OS ROM you are using. If you are using a Stock ROM (like an Alltel ROM) on a non Alltel phone do not run the customizations becuase it does some provider specific stuff to the radio of your phone.
Most if not all "Cooked" ROM have had the customizations stripped out. A few cooked ROMs might be for a specific provider that does have provider specific custumizations. That is probably clearly stated if it's the case (e.g. Freds Sprint 6.1 GPS ROM).
If you use say the "Sprint Leaked ROM" as is on a Sprint phone you can let the customizations run.
