If you want to fix old appointments that are an hour off because they were created pre-patch you can use Microsoft Office Outlook Tool: Time Zone Data Update Tool

and if you want to do it to your whole exchange server and all your mailboxes you need this also (I just finished doing it to ours, scary... but worked out pretty nicely I think). Make sure you have the windows time patch and the exchange time patch before you do this.
