The HEX cannot be changed, as it's 'hardwired' into the handset by the manufacturer. We see some phones, as to where the HEX has '0'd' itself out, but it's pretty rare anymore. I've also noticed someone on this board that was able to change it, but it's definitely dangerous.
As I stated before, I'm going to test it at work tomorrow again, and I'll address it with the Kitchen crew, if it's true.
