GaMedic has a thread on the WM6 kitchen, the principles are similar, but the 6.1 kitchen is another leap forward in kitchens and is slightly different.

The simple suggestion is to choose a bare minimum to start with. This will minimize errors and get you familiar with the process. Once you are comfortable with the process you'll probably want to try adding in selections to try new apps, OEMs and the like. I would personally suggest running OEMizer (in the tools menu) and set up your personal OEM as a first thing to do. Once that's done pick thru the apps you want to include and run Build OS.
