Yeah, it's a setting. Open Outlook on your phone, choose Menu, Tools, Options. Select your Exchange account (should be Outlook E-mail), click Next twice, click on E-mail (not the checkmark, but the word E-mail), click Settings. In the Download the Past dropdown box, choose All. Click OK. Click Finish. You may have to wait a bit while it retrieves your messages again, but now they'll stay.
