yeah, you could use a stock rom as a base. I just figured someone would want to throw in 6.1 or something.

Well, yes - this route to a kitchen is a no-brainer. Use PrepIt.bat to decompose an RUU_signed.nbh into a kitchen and then you can add OEM's and build away.
However, what it seems that
most folks want from a kitchen, is the ability to take out as much of the OEM (Sprint / HTC) stuff as they can and then add in the replacement stuff that they prefer over the Sprint and HTC stuff. THIS is what can be time-consuming and cumbersome as you have to go through the SYS and OEM folders and create an option.xml file for each of the elements you want to separate out and provide as a check-box in the kitchen.
i.e.
Vogue_Kitchen_Tools.rar (extracts into the empty kitchen)
RUU_signed.nbh (file from the stock sprint update)
run PrepIt.bat (extracts the RUU_signed.nbh into various elements)
*** drop in OEMs ?
run BuildOS.exe (guess what, without additional OEMs, the kitchen has no selectable elements)
run BuildIt.bat (you just rebuild the stock sprint RUU_signed.nbh)
Now, at point *** you could drop in OEM's but quite a few of the OEMs are already present (in some form or version) in the stock sprint ROM.
This is where the PPC Kitchen is so valuable (for the Titan / Mogul, etc.) in that the ROMs have all of these selectable elements available and optional.
(obviously this post wasn't for you, Colonel; you've forgotten more about this stuff than I can ever hope to learn - it is a general note that I felt would add to the discussion)
