I have never tried this, but theoretically you may be able to install
ICS Control and use your phone as a USB modem with your PS3. I am not even sure if the PS3 would support a USB ethernet device, but ICS Control provide a bit more flexibility for situations like yours. If it does not work, hopefully Chainfire will figure out how to implement infrastructure mode and all of our problems will be resolved.
