Actually, truth be told Android is the safest OS there is in terms of privacy. The thing is on Android when you have access to the source code you know exactly what is going on and can remove it or just load up a custom rom like cm10. On an OS you have no source code to, you have no clue what it is doing in the background.

Now on the carrier spying issue, to be honest carriers have access to pretty much everything your doing anyways unless you encrypt the communications.
