Until the Touch gets the Rev A update, BT2.0 will be able to keep up with your phone's data connection. BT2 seems to top out at a little over 1mbps from my experience. Testing by tethering over WiFi in the same location shows my true max speed to be about 1.8 mbps. So as long as you're still forced to use EVDO Rev0, BT will be adequate to max out your data speeds.

Now if you want to tether over USB to keep your phone charged, you could try a program called USBModem. I've used it in the past to tether over USB to Macs.
