the Epic was STOCK, Virgin never been rooted, so she used tha one click root methad and got root and i had her to check for tha Superuser icon in her apps to verifiy that she was rooted. and it was there, so she then flashed the Rom above and flash with no problem..but she noticed that the rom was diff but still had all tha sprint apps still on it. so i told her to just go into settings/and so on and click uninstall but the uninstall button whould not let her click it..so i had her to check n c if she still had the Superuser icon n hers apps still and she said no....its gone..so as of now we need to know if this rom we used made her not root anymore? if'so then

When you odin any rom+kernel you aren't rooted unless the rom+kernel is pre-rooted for you..in this case it isn't so you aren't rooted.

then can she still use the One click root methed that she used tha first time and gain root again to flash a diff rom?

No, that one click method only works in froyo and below. IT don't work in gingerbread. You will have to odin, or use a gingerbread root method.
