It does that anytime I reply to an email from my works exchange server, and it will do that to the entire email, not just what I typed. My other servers work fine. I looked into it and the only fix i could find was to use another email client, or get gingerbread. Its pretty common if you google "samsung epic exchange br" I don't have time to be messing with my phone all the time, or I probably would have it rooted already.

Whats the brand on the sd cards? maybe frys accidently got their hands on some of those fake cards..it happens..though usually sd cards have lifetime warranty depending on brand (To note Ive had same sd card since day 1 and works fine)
As for that other issue it sounds more like an issue with the tower :/...if you have another phone to test on would make it easier.
Now for exchange it looks like its trying to send HTML email and it gets sent out as plain/text.
I would suggest just to load up a custom rom..you don't need to tinker with your phone too much its a pretty simple and straight forward process..I personally loaded up acs frozen 1.2 + genocide kernel+journaling on and have been using it for months..no extra tinkering...and doesn't require much time..
