I'm hoping for whatever is the most trouble-free as possible. Don't care at all about eyecandy or games or anything (HATE the moving weather thing). Lightweight/power saving is priority. I don't currently use Sense at all, typically I use the default menu system (not the windows one that revolved like zune but the one where everything has its own stationary line, not sure what it's called). These are the things that I use most often:

Opera Mini
pnotepad
To do lists
MS MyPhone
Evernote
File Explorer
Camera/Albums
youtube (occasionally)
Instant Messaging (occasionally)

In the past I didn't use tethering but I'd like to be able to on occasion, but I'm not sure what I have to do to set it up.

Any advice is appreciated.

Sounds like you like Titanium (No Sense UI everything in one line) so I recommend you look at those roms. The previous suggestions are great roms but Sharkie doesn't do Titanium. Vin has a Titanium rom. Titanium is the term that was given to the standard WinMo 6.5 Interface.
