I use 5GB a day/avg... so your theory here is almost close... I can "backup" about 3 movies in a 24 period..

stealth tethering ONLY works on USB Tether.. I cant speak for Darren, but i use WifiRouter app.. so no, no Stealth here at all!

most Ive used is 130GB or so.. i do about 80-90/100 on avg though.. doing the same things you mentioned above - just Alot More of it lol
