Re: I plan to flash my ROM, what files should I backup to transfer after flashing?

Definitely do what rstoyguy suggested.

Pim.vol did not work on my Sprint Touch.
I copied it over to the storage card, and after a re-flash, copied it back to the device.
I reset, and then was unable to get a radio signal.
Strange problem, but that's what happened. I even tried reseting about 4 times.
Then, I deleted the pim.vol file, reset, and radio was back.
The device re-creates a pim.vol file for you.

I just did this as a test, because it would be quicker than using PimBackUp.exe.
It didn't work, so I'm sticking to the PimBackup program.

It's free to use and available here.

It's up to version 2.8.
Best part, there's no installation needed for Pimbackup.
It's an exe file that you can run from your storage card.
I keep a copy in the \storage card\Program Files folder.
When I need to make a back up, I just go to that folder and run the exe.
