I had the same question. What I did is made the default notufication the one I wanted for my emails. And changed all the other ones so they weren't the default one. Seems like you can change all the notifications but the email one. I had my lady record a custom message for every notification.

If you do that, you will hear mail sound for other programs that use default notification sound and have no way to set sound within program.

I haven't run into any mismatches. You should try it, then again I don't have a huge amount of apps with notifications.
