I have followed each step as you described.
Here is what I did..
Formatted 7.4GB sd card with 1GB ext2 & rest fat32. Unzipped everything from your package and put it on fat32 partition. Chose haret (install) from teh npkinstall folder and the it goes into a boot loop without getting to the android gui. So copied startup from programfile to the sdcard root and ran haret. Android loads fine (can see gingerbread). However, from time to time, processes crash and battery levels are incorrect (example-windows shows 45% vs android shows around 80%). Incoming/outgoing calls work as well as wifi. However, there is no 3G data. Tried fiddling with APN settings but still no luck.
As for gingerbread performance, the apps are sluggish and take a while to load. wifi performance is slow too. I am not sure if I am doing anything wrong or missed something. It is definitely not the same performance as in your videos. Installing angry birds from the market takes for ever over wifi.
I am on sprint using touch pro 2. Any ideas how to setup apn or bring up 3G data?

1- see the welcome screen don't touch the phone wait for green light
2- don't sync yet. skip everything get to home screen. i add it launcher. pick that.
3- go to wireless & networks/mobiles networks/access point names/menu key and add apn
4- call setting if you have sprint
5- sound. get your sound and ring tone ready
6- location & security setting. unchecked gps satellites.
7- applications. check unknown sources
8- NOW YOU CAN SYNC WITH GOOGLE.
9-let the phone sync. see the green light
10-open all apps. then reboot your phone.
I'M STILL WORKING ON A FEW THINGS FOR MORE STABILITIES.
