Yes, you can uninstall CHT. I've just updated the 1st post under "SharkieROM FYIs" to reflect what apps and such are uninstallable.
IMO, there doesn't seem to be much of a speed or battery life difference between the two. 6.5 has a wee bit more free memory, I believe. It's hard for me to judge because I flash so often...
Maybe someone else can provide a better answer.
