But my stock rom had quite a bit more packages (some necessary) that weren't anywhere on the list. What are some of the common, unneeded memory hogs that I could strip?

A lot of the HTC stuff is depend on each other so its hard to say. I am no expert but I dont include the below items.
Manila footprints
Manila Document tab
CM Guard Service
STK Service
Data Disconnect
HTC Animation (no boot animation but faster boot times)
HTC Lock Screen 2 (Seems to be slower then the default winmo one. you can skin the default one anyway)
HTC Startup (never figured out what this was for anyway)
JETCET Print
Menu Enhancement (Default winmo menus are good enough for me especially with the theme i run)
Voice Command
PKG 1.1.0.0 (never figured out what this is for...)
TaskManager 2.1 (I use xtask)
From the SYS I dont include:
OneNote
SqlCeMobile
WindowsLive
WIndowsLiveIM
WMWidgets
I also patched nk.exe to remove the cert checking (Found
here, there is an app someone wrote to do it form command line) Some kitchens have this built in. There is some debate as to the benefits.
