Absolutely. Do a NAND backup before you flash a custom ROM and you can go back like you never changed. I have multiple NAND backups of different ROMs that I can bounce back and forth between. You can flash and run a ROM for a day and if you don't like it, be back up and running within 5 minutes exactly where you were before the flash.
