You cant with sense. You can use ADW like the previous said or use Launcher Pro to change the number but you can only do 7 or less and not more. The closest you're gonna get to the Sense look is by using Launcher Pro and then buy the plus add-on so you can have widgets like poeple, calendar, facebook, twitter, messaging, bookmarks. Then you will need to buy either Beautiful widget, or Weather & Toggle widget to get the look of sense clock and weather. There's a free one called Fancy widget that you can probably find by googling.
