Okay, I got mine uninstalled by doing this.....
I installed another copy that was posted over at XDA, over the one that I had. This will install a copy of Opera Mobile that will also be listed in the uninstall programs. Here's a link to the thread. It's about the fourth post down---

Then after I uninstalled it from the systems tab of the setting menu, I ran Darkness's Opera default remover cab and did a soft reset. That restored all of the file associations/icons that Opera Mobile screwed up.
Now my phone is back to normal
