Because they can't produce enough red meat on the islands and it takes so long to ship the cattle that spam last for quite some time and they have learned to love it...  the other type of pinkish/white meat

wrapped in a seaweed. you bit into it and its like a juicy burger, no lie.
remember all this spam is cooked not cold.
