I also got my wife using the Treo Pro. She's not especially techie so I made things as simple as I could. Shortcuts to the few apps she needs on the homescreen (using the free Easy Launcher), Weather To Go plug-in (free), Google Sync for calendar, contacts, and email, Opera Mobile 10, and that's it. I also installed a few things for me to use on there, like Total Commander, so I could fix things more easily if anything got messed up. The ROM is stock, and I decided to remove RealVGA. She doesn't miss it, and it's one less thing to have problems with.
