Here is a different method that I use. This makes a cab file with all your email accounts/configuration. It stores everything but your passwords (also it does not store exchange accounts).

Just unzip the file. Get connected through activesync, then run the RunConfig.bat. It creates a cab file called MyMail.cab that you can put on your SD card and run after a flash.
