Assuming you're not using the Titanium ROM, the only way to switch back to separate volume controls is to enable sense, go to the settings tab, select "Sound & Display", then under Volume turn off "Single volume". I'm sure there's a registry setting for this as well, however I'm not sure what it is from a brief lookthrough
