If you want to uninstall some of the shipped apps use sktools like razor said or you could try tms uninstaller.

i tried tms uninstaller the only thing i could delete was programs off the sd card is there a setting i gotta change so i can delete the stuff off the device thanks |
Well, if you want to uninstall apps like Sprint Nav you should be able to have tms Show All installed apps or set it to show apps not listed as installed in the regular Remove Programs section of settings.
I know for a fact that sktools does this.
Now, like MiamiSon said you can't completely remove all traces of these apps in rom (for example removeing cabs) but you can uninstall the apps.
