I presume that's the July 14th release? I'm using an Alltel TP (not crippled like the Vz) running 21911.Sense2.5.Cookie.Jul.27, but tried both 21911 & 23569 July 14th Titaniums and Youtube didn't work on either, so I don't think Verizon's to blame on that one. For me, Youtube would start to load & then just disappear, it was not even left showing in any task manager. Presuming you observe the same, I suspect this Youtube issue is because it's a ported HTC app that's looking for some other HTC/Sense files that are missing in the lighter Titanium release. Loading the official Youtube app from google should work, though.

I don't recall any problems with Opera, but I'm not even sure if I tested it. You could try reinstalling the same version if you can find a cab for it, or try installing a different version, or try the java based Mini version.

Very few folks use the Titanium version, so it's a very low priority. I tweeted the Youtube issue I observed to NRG, we talked about testing it, but never hooked up. Maybe he fixed it on his own. If the pending Aug 8th ROM updates don't improve things for you, maybe send NRG a tweet & see if he has the time to do some testing with you.
