Yes the boot time is longer on a deodexed ROM. Dont freak out, can be 30 seconds or so sometimes. Boot loops are a bad thing, long boot times are no sweat.
The ROM is just as quick. I've read that the deodexing (?) process can make the ROM less stable than odexed ROMs but I've flashed every one of OMJ's deodexed ROMs (shocking, I know) and have never had an issue.
