There are a few themes that will change the bar for you, as well as other things.
This one at XDA is nice and works with Fresh 3.+ as I have it now. It also includes color icons for the taskbar and a few other goodies.
Ironically I am running Launcher Pro and like it more than Sense, but the taskbar and theme color changes remain intact.
