The stock voice dial app was probably my biggest disappointment when switching to Android from WinMo (used to MS Voice Command). I found Choice Dialer (now Choice Dialer+) in the market. It's worth every penny. It has a lot of cool features (send text to... create appointment next thursday at 2pm... etc.). It works far better than the stock voice dial app.
