Well I was thinking of non-gmail accounts. But....
If you have a lot of gmail messages on your device when you run the backup I assume it will still back those up.
As a test I'll try this later since you cant restore your data:
backup
flash new ROM but dont link gmail
restore data and see what messages/attachments are there
