I've heard of a couple methods:

1. Renaming the folders and placing a "." (no quotes) at the beginning of the folder name. For example, make a folder and call it: .Private

2. Creating and placing a .nomedia file in the directory you don't want the gallery to see.

You can still browse to the directories through a file manager (Astro, EStrong, etc) but it won't show up in the Media Gallery. I use the .nomedia file method
