1. IMO the most popular ROMs are MightyRom, BigMaxSense Rom, Energy, Mr. X, and Vin's roms. I've tried them all and I'm currently running MightyRom, but if you're familiar with flashing from your Touch Pro it should be pretty self explanatory when you look through their respective threads what you're options are.

2. My must have apps include Skype, Opera Mini 5, Touch Twit, Total Commander, psShutXP, and Bing. Some apps come with ROMs, Some you can find on Marketplace, some you may have to search for it in these threads. A good place to check for apps and upgrades is here

3. Check the Android forum for information on Booting Android. The thread with all the information, support, and links to downloads is here. After installing, check here for information on how to set up dual boot. Note that the Android setup is not perfect, and by not using the startup utility it won't automatically set up your backlight to turn off.

I'd definitely read the stickies before going to far, they have a lot of information in the Upgrades section. After flashing, search through the Themes section for ideas to customize it how you like.
