That is controlled by Voice Command. To turn it Off or change what it reads go to your Settings Tab and click Menu -> All Settings, Personal -> Voice Command.
Unfortunately it doesn't have separate settings for SMS or Email, only Messaging. I find it funny when it reads texts to me but I cant stand it with emails so i had to turn it off.
