I'm not sure if this is what OP is talking about, but Outlook offers a "Nickname" field within the "all contact fields" list (among many other fields). But I don't believe it is possible to show that on the phone by default.
If you just assign the nickname as the contact name as bored said, then you can use the nickname to voice dial them as well. Great as long as your nicknames are SFW.
