NAND backup is a copy of the ROM image, it copies EVERYTHING. Let's say you are on OMJ, run NAND then flash Fresh. If you restore NAND you'll be back on OMJ.

Titanium backs up contacts, bookmarks, settings etc. It can be used to set up your new ROM. These are settings you take from one ROM to another.
